Baked Kale Chips

Kale is one of the best super foods of our time.   It’s high in beta carotene, vitamins K & C, Lutein, and reasonably rich in calcium.   It also contains a chemical compound called Sulforaphane, which is released when chopped or minced.   This chemical has been shown to have anti-cancer properties.
One of my favorite ways to enjoy kale is in the form of a kale chips.   It becomes a crunchy, tasty treat that can easily replace potato chips in your pantry!

Ingredients

  • 1-2 bunches of Kale (can use pre-washed packaged kale as a time saving technique)
  • 1 T. olive oil
  • Chili powder
  • Garlic powder
  • Salt & Pepper
  • Dash of Cayenne Pepper (if you like things spicy)

Directions

  1. -Preheat oven to 425 degrees
  2. -Remove kale from stalk, and tear into large pieces
  3. -Put kale into a bowl, add olive oil, and massage into the kale (this helps to soften the kale, and break down the cellulose structure)
  4. -place on baking sheet, sprinkle on your salt, pepper & seasonings
  5. -bake for 5 minutes or until it starts to turn a bit brown, turn the kale over and bake with the other side up until it gets crispy but not burnt.   Keep an eye on it, because it can burn quickly.
  6. Serve immediately & enjoy!
